Whether you're a or lactose intolerant
(or just curious), here's a fun recipe to try out - Vegan Mac & Cheese! Instead of cheese, we use , which gives a rich nutty flavor. It may not taste the same as normal mac & cheese, but it sure is delicious in a different way😋
Here is the recipe📝:
1) Boil 4 cups of water with 1/2 tsp salt and 1 tsp oil.
2) Add 1 cup pasta and cook until it is "al dente".
3) Remove pasta from heat, drain the water and keep aside.
4) Soak 1/4 cup cashews in a cup of warm water for 30 minutes.
5) Then ground the cashews along with water to a fine paste.
6) In a saute pan, heat 2 tsp oil and add 1 clove of garlic(minced).
7) Once the garlic is golden brown, add 1/2 cup
soy or almond milk.
8) Once it bubbles, add the cashew paste, and stir well to combine.
9) Wait until the mixture starts bubbling again, and add cooked pasta.
10) Mix well to coat the pasta with sauce. Sprinkle 1/4 tsp red chili flakes and serve hot.

When we're talking about fall desserts, it's
hard to beat the apple + cinnamon combination!

Apple pies are usually high in calories due to the pie crust, but you can enjoy our even if you're watching your weight. It's also super easy

Here is the recipe👩‍🍳📝:
1) preheat oven to 350℉.
2) Scoop out the core of 2 apples from the top (don't cut all the way through).
3) Stuff each apple with 1 oz cottage cheese and 1 oz nuts of your choice (we used mixed nuts here).
4) Place the apples in a shallow baking dish. Add 1 tbsp honey and 1/2 tsp ground cinnamon on top of each apple.
5) Bake in the preheated oven for 15 minutes. Enjoy🍎☕️!

Potatoes are a very nutritious vegetable. Why not incorporate potatoes into today's meal!

Here is our Potato🥔 & Cucumber🥒 Salad!

Here is the recipe🧑‍🍳📝:
1: Peel 2 medium potatoes and cut them into quarters.
2: Boil some salted water and cook the potatoes until soft.
3: Drain and cool.
4: Slice the potatoes into 1/2" thickness.
5: Cut 1 small onion in half and thinly slice.
6: Thinly slice 1 small cucumber.
7: In a bowl, combine the onion and the cucumber, add 1 tbsp olive oil, mix well, and set aside.
8: Rinse and chop 1 bunch fresh parsley.
9: In a pot, add 1/3 cup vinegar, 1 tsp sugar, 1 tsp yellow mustard, some salt and pepper.
10: Let it come to a boil, add 1/3 cup vegetable stock, and let it boil until it's reduced to half.
11: Turn off the heat and add the potato slices and the onion-cucumber mix.
12: Give it a good stir. Garnish with fresh parsley and spring onions (optional).
