🔥 Welcoming Summer Solstice with Grilled Steak with Sauce Rof

Yield: 8 servings
Ingredients:
3 pounds skirt steak or boneless short ribs (cut ½-inch thick) or chicken thighs
Coarse kosher salt (such as Morton)
Freshly ground black pepper
2 medium white or yellow onions, diced
2 serrano or jalapeño chiles, stemmed
4 garlic cloves, peeled
8 scallions, trimmed and thinly sliced
1 (4 oz) bunch parsley, leaves and tender stems only
2 lemons
½ cup extra-virgin olive oil
