SprintSet Style Halibut Ceviche Recipe
Ingredients:
1 lb fresh halibut, skin removed, cut into 1/2-inch cubes
1/2 cup fresh lime juice (from about 4-5 limes)
1/2 cup fresh lemon juice (from about 2-3 lemons)
1/4 cup red onion, finely chopped
1 serrano chili, seeded and minced (adjust to taste)
1/2 cup cucumber, peeled and diced
1/2 cup fresh cilantro, chopped
1 ripe avocado, diced
Salt and pepper to taste
Extra virgin olive oil for drizzling
Optional garnishes: microgreens, edible flowers(for elegant party), or thinly sliced radishes
Instructions:
Marinate Halibut:
In a glass bowl, combine halibut cubes with lime and lemon juice. Ensure the fish is completely submerged.
Cover and refrigerate for about 2hrs.
IMPORTANT-The fish is ready when it becomes opaque and slightly firm to the touch.
Mix Ingredients:
Drain about half of the citrus juice from the bowl.
Gently stir in the red onion, serrano chili, cucumber, and cilantro.
Season with salt and pepper to taste.
Final Touches:
Just before serving, gently fold in the diced avocado.
Drizzle with a bit of extra virgin olive oil.
