Kubdari or კუბდარი is another form of round khachapuri which is considered that national dish of the Svan people in the gorgeous but remote mountainous region of Svaneti (the birth place of our favorite seasoning... Svaneti salt). This is a meat pie Khachapuri also referred to as "mountain pie" is traditionally stuffed with some mix of beef, lamb and/or pork spiced with local seasonings. Kubdari was inscribed on the Intangible Cultural Heritage of Georgia list in 2015.

Lobioni or ლობიანი is a classic style of round khachapuri from the Racha region of Georgia. It is very popular as a street slice in the city or as a staple of the supra or keipi table. Unlike most of its cheesy cousins, lobioni is stuffed with garlicky herbaceous lobio or kidney bean stew.
