Limburger has gotten a bad rap for far too long. The King of Stinky Cheeses is absolutely amazing! And we should know since Chalet Cheese Co-op in Monroe, Wisconsin is the last place in America still crafting this little treasure.
Limburger goes all the way back to the 15th century where Trappist monks first started making it in Limburg which is located in Herve, a province of Belgium near the Germany and Holland borders. The cheese is known as “Herve” in Europe, but “Limburger" everywhere else. Whatever we call it, Limburger is smear-ripened cheese made from raw cow’s milk and “ripened” over a 3-month aging process. At that young age, the paste is sweet, the odor from the washed rind is still relatively mild and the texture is spreadable.
Serve Limburger “The Wisconsin Way” by cutting a 1/2” slice and putting it on some fresh rye bread with brown mustard and a slab of onion. Pair it with coffee or your favorite stout beer and just like that — voila! — you’re an honorary Wisconsinite! Look for Limburger at or Wisconsin Cheese Bar & Cheese Mart.
