Hey boos! I've been away a bit for health reasons. I'm on a personal mental and physical detox. As I was looking for some detox recipes I came across Raw Vegan Waldorf Salad in Avocado Shells! OMG! THIS SOOOO REFRESHING AND DELICIOUS! Check out their recipes on dherbs.com. I've been using them all week. 5 more days to go on my detox!

I remember my babe wanted me to experience his culture of food by having a island breakfast and I fell in love with the ackee and saltfish. The dumplings were ok but the yams or potatoes were delicious. The callaloo was to die for. Since then I have used ackee in many different ways.

Here is one my fave Mock Egg Toast in which I use Ackee as the main ingredient. This meal is strictly a vegan dishes.

I hope you enjoy! Let me know if you make it and send me a pic.

1 can ackee, drained
1-2 tbsp olive oil
1/2 cup chopped shallots
1/2 cup chopped mushrooms
2 slices of bread, your choice of bread...I prefer rye but this one I used basic white
1/8 tbsp black salt (optional, if you want that egg like flavor)
Vegan butter
Optional - black pepper

In 2qt saucepan add 1-2 tbsp of olive oil. Add onions and mushrooms to cook for 3-5 minutes. After this, add ackee and cooked for 3-5 minutes. Be careful in stirring, you don't want the ackee mushy but you want some bits as if the consistency is scrambled eggs. Add black salt.

Toast two slices of bread and add vegan butter after you Toast the bread. Top bread immediately with ackee eggs!
