Chicago tavern-style pizza is how a lot of us grew up eating pizza in the Midwest.

Thin crust. Square cut. Toppings under the cheese.

It’s been a staple in neighborhood pizza joints, taverns, and family gatherings across Chicagoland for generations.

Some places will throw a few pepperonis on top for extra crispness, but traditionally the toppings go under the cheese. That’s how we remember it, and that’s how we make it for our friends and community here in the PNW.

For years, when people outside of Chicago thought of Chicago pizza, they thought deep dish. The funny thing is most Chicagoans grew up eating tavern-style far more often than deep dish.

At Proof, we’re not trying to reinvent anything. We’re making the pizza we grew up with, and are excited to share it with you too.
