What a week in Las Vegas. Pizza Expo 2026 delivered.🍕

A few things we can’t stop thinking about:
• Heat is getting more specific. Think Calabrian chili and other regional peppers showing up across menus.
• Crust is stepping into the spotlight. Sourdough, high-protein, low-carb, even puff pastry bases. It’s becoming the signature.
• Global flavors are shaping LTO strategy. “Passport pies” are moving mainstream, giving operators a reason to rotate menus and drive real buzz.

And as always, the connections made it. Grateful for those we spent time with this week. This is where ideas turn into something bigger.💡
