Shepherd’s Grain Ensemble Whole Wheat Flour is milled from the same Dark Northern Spring Wheat used in our Opus High Gluten Flour, delivering strength, depth, and consistent performance in every batch.

With a target protein of 14.5% and ash of 1.5%, this whole grain flour offers rich, nutty flavor and high dietary fiber. Designed for versatility, Ensemble thrives in applications that benefit from long fermentation, it doesn’t just tolerate it, it’s built for it.
