Lemon Blueberry Bread! 🍋🍞
We ate it hot out of the oven with butter! 💖 Yum!

Ingredients:

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1 1/2 cups fresh blueberries, tossed in 1 tablespoon flour

Directions:

1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
5. Stir in the vanilla extract, lemon zest, and lemon juice.
6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients.
7. Gently fold in the blueberries coated in flour to prevent sinking.
8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
9. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
10. Allow the lemon blueberry bread to cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
