I was making this Gluten Free Carrot Cake for my family for tomorrow and I’m assembling it, and I’m struggling to get the candied pecan crumbles on the side and I say out loud “I just want to make a beautiful cake” in frustration that it’s not turning out the way I wanted.

I kept going, I’m making a huge mess all over my counter, my hands are covered in cream cheese and candied pecan crumbles, and my youngest daughter walks by and says “wow mom, that cake looks beautiful!”

Sometimes the best lessons I learn in life come from the heartfelt words my 5 year old has to offer!

It might not be the way I imagined but it’s going to taste way better than anything you can get at the store. And it’s made from love, that’s always my secret ingredient. And butter. ❤️
