Citrus-Marinated Spatchcock Chicken β Straight on the Grill ππππ₯
Recipe:
1. Spatchcock it β cut out the backbone + flatten.
2. Marinade: ΒΌ cup olive oil, juice + zest of 1 orange + 1 lemon, 4 garlic cloves smashed, fresh thyme, salt, pepper, and a pinch of chili flakes.
3. Rub + Rest β coat the bird, marinate 2β4 hrs.
4. Grill Setup β medium heat, 375β400Β°F, 2-zone fire (direct + indirect).
5. Cook β start skin-side up over indirect, cover for ~30 min. Finish skin-side down over direct heat for crisp + char, until 165Β°F in the breast.
6. Rest + Slice β squeeze fresh lemon/orange before serving.
