Don’t skip the acid.

3 Persian cucumbers, thinly sliced
1–2 radishes, thinly sliced
1 nectarine, thinly sliced
1 package heirloom cherry tomatoes, halved
3–4 cups cooked quinoa
1 handful fresh basil, julienned
3 tablespoons finely diced red onion (or scallions/chives)
¼–½ cup crumbled goat cheese or feta
Olive oil, to taste
Salt, to taste
Black pepper, to taste
1–2 tablespoons pickled onion brine, lemon juice, or vinegar (optional)
