This is not a wheel of cheese.

It’s a truckle — a clothbound, barrel-shaped format cheesemakers have used since the Middle Ages. The name comes from the Latin trochlea, meaning “wheel,” which honestly just adds to the confusion.

It’s how we age our Reserve cheeses, and the shape and cloth rind let them develop flavor from the outside in. This one is our Marco Polo Reserve: rich and buttery with cracked green and black peppercorns.
