Bee In Your Bonnet Seguin

I stopped by Costco this morning after I went to check on Mom and Dad. I picked up a few things and by the time I got there I was starving....it took everything I had not to grab a big Costco hotdog and and soft drink.

But I resisted....

When I got home I ran in, dumped the haul on the table to deal with later and pulled together a quick lunch.

To me that has always been the hardest part, the coming up with something to eat. Something quick and easy and full of what my body needs. But I am re learning and bowls like this are easy for me. I keep the staples in the house and dump them together in a bowl. It's visually appetizing to me and it gets the job done. Herbs would have been nice on top too, but whew I sure was ready to eat. Maybe next time!

This one has;
1/2 cup Alabcore Tuna
1/2 Garbanzo beans (Chick Peas)
1/2 an Avocado
1 Mini Cucumber
Diced red onion

A squeeze of lemon juice on the Albacore, with garlic pepper and salt. A drizzle of olive oil (2 tsp) and I had my protein and healthy fats.
Light, refreshing, quick, easy. Plus it's super filling.
