These black locust blossoms are all out right now and anytime you get near a tree with these cascading white flowers you’ll know immediately. Their delicate floral notes definitely add to the quality level of our local honey in this region. We are lucky to be able to use such delicious honey for our meads and oxymels. 🍯🥂

When we use ingredients that only come out during particular seasons, it by default will align us with the rhythms of Nature. Every spring, I cherish the opportunity to work with the wild violets, and we make simple syrups, popsicles, sometimes a small batch of mead or two, and sometimes we just throw the flowers and leaves into our salads! What are some of the things that you love to find and use during the spring time?
We enjoyed our own private concert while the many visitors focused on photo shoots of blossoms and monuments and each other. This guy sang his little heart out! It’s good to feel that way!

No wonder Saffron is so expensive! Each individual stigma from the flowers is plucked by hand. To be sure, these early blooming crocuses we see now are not the kind that you would harvest Saffron from.
