When I started this business, I wanted to honor her, make her proud, and keep a small piece of her legacy alive through something that brought people together the way her food brought our family together.

I'd like to think she's looking down today, smiling and proud of what we've built together. What started as a way to honor her memory has grown into an incredible community built around great food, kindness, nostalgia, and the simple joy of grilled cheese sandwiches. ❤️

After more than five weeks, Mom is finally home from the hospital.
From the bottom of our hearts, thank you to each and every one of you for the love, support, concern, prayers, messages, and well wishes. We are truly grateful, and my mother wanted me to personally tell you thank you as well.
She is home and continuing her road to recovery with the help of physical therapy, nurses, family, and especially my sister Tracy and her husband, John. She is an incredibly strong woman with a fighting spirit, and she has proven that time and time again. 💪
This experience has been a reminder of just how quickly life can change. Please take a moment to hug your loved ones a little tighter, tell them you love them, and cherish every moment you have together. ❤️

I want to give a special shout-out to The Honest Food Guy for stopping by Cheese Dreams LLC and reviewing one of our specialty sandwiches, the Hawaiian Express.
For those who haven't tried it, it's grilled ham and pineapple with cheddar cheese and a grilled mozzarella border.
When he finished his review, he asked me what rating I thought it would receive. I figured it would be a little higher than the score he gave it, but then he explained why, and honestly, it made perfect sense.
His point was simple: when someone orders a ham and pineapple sandwich, they expect to get that flavor combination right from the first bite. Because I was using half pineapple rings, it could take a couple bites before you actually got pineapple. On top of that, sometimes the pineapple wouldn't bite through cleanly and could pull right off the sandwich. Anyone who's had that happen knows suddenly you're focused on chasing pineapple instead of enjoying your sandwich.
His suggestion was to cut the pineapple into smaller pieces and spread it evenly throughout the sandwich. That way every bite delivers the full experience ham, pineapple, cheese, and all the flavors working together exactly as intended.
What I appreciate is that he didn't just make a review for his audience. He took the time to explain it directly to me as the owner so I could improve the product and the experience for my customers.
After he left, I made a few sandwiches using his suggestion and asked customers what they thought. The feedback was great. The smaller pineapple pieces also create more edges to caramelize on the grill,Pineapple in every bite, and no pineapple sliding out also it adds even more flavor. It ended up being a win all the way around.
One thing I've learned in business is not to take constructive criticism personally. Your customers are the reason your business exists. If someone takes the time to offer honest feedback that can improve the experience, be grateful for it.
Sometimes the very criticism we don't want to hear is exactly what helps take us to the next level.
So thank you, Honest Food Guy, not just for the review, but for genuinely caring enough to help local businesses improve. Much respect for what you do, the way you do it, and what you bring to our community.
We'll be making the Hawaiian Express even better because of it from now on.
