It’s time to take advantage of all the marked down and clearance cranberries! Cranberry juice canning day - 4 lbs fresh cranberries turned into 13 quarts of shelf stable cranberry juice for use throughout the year.

I used 1 1/2 cups cranberries per quart jar and topped with boiling water leaving 1” head space.

I did not add any sugar or sweetener. We will sweeten as we use it. You can add sweetener when you fill the jars or at the time you use it. You can add sugar, honey, agave, monk fruit, stevia…. Any sweetener you prefer and to your own taste.

I heard a rumor that today was the hottest day in Houston, Texas in the past 7 years. When I checked today we were at 107F with a heat index of 114F.

Mr. O’Donnell works outdoors doing hard labor and I’m constantly worried about him having problems with dehydration and heat exhaustion.

When he comes home zapped from the heat I like to give him pickle juice. This drink shown is dill pickle juice, a little honey, a bit of water, and a bunch of ice! It always seems to help him when he is cramping up and feeling fatigued from the heat.

Sorting the harvest! Things are starting to come in quick now. We are so thankful for the bounty we are receiving each day.

Now we are shifting into high gear preservation! We have been preserving about once a week but now it’s going to be daily or every other day.
