Cornbread is on regular rotation here year round. My Nanny made the best cornbread around. She was a great southern cook, and taught me so much in the kitchen. Nanny never could make biscuits, but she served cornbread muffins with nearly every meal. The most important step is to let the oil in the skillet get hot, so the outside of the cornbread is crispy. This is her recipe slightly modified with avocado oil instead of vegetable oil like she used. ⭐️ 1 cup self rising cornmeal ⭐️1/2 cup self rising flour ⭐️2 tablespoons of sugar (optional) ⭐️1/4 cup oil or lard (I use avocado oil) ⭐️1 large egg ⭐️ 1 1/2 cups buttermilk -Preheat the oven to 425. Pour enough oil or lard in the skillet to coat the bottom, and put it in the oven while it pre-heats to get hot. -Pour the buttermilk over the cornmeal and let it sit for 10 minutes. -Combine the sugar, flour, egg, and oil. Add the mixture to the saturated cornmeal. -Carefully remove the heated oil, and pour the batter into it. -Bake for 25-35 minutes or until it is golden brown.
