This is a late weekend post but this meal is easily one of my favorite go-to weekend breakfasts. During the week, I prefer a light breakfast but I like switching it up on the weekends. Croissants & Tofu Scramble With Mixed Veggies. 🍴😁🍴

I tried my hand at making an Ethiopian veggie combo at home. I PURCHASED THE INJERA FROM AN ETHIOPIAN GROCERY STORE. I wasn't ready for making injera myself yet. Twas good!
