Salty Corn Porridge
A thick, creamy porridge made from ground corn, often served with butter, cheese, or even savory toppings like herbs and olive oil.
Ingredients:
1 cup stone-ground cornmeal (or coarse cornmeal)
4 cups water or milk (or a combination of the two)
½ teaspoon salt
2 tablespoons butter
½ cup grated cheese (optional, for extra creaminess)
Black pepper and herbs for seasoning
Olive oil or melted butter for garnish
Directions:
Boil the liquid: In a saucepan, bring the water or milk to a simmer. Add the salt.
Cook the cornmeal: Whisk the cornmeal slowly, stirring to prevent lumps.
Simmer: Reduce heat and cook for 20-30 minutes, stirring occasionally, until thick and creamy.
Add butter and cheese: Stir in butter and cheese for extra richness.
Finishing touch: Season with black pepper, drizzle with olive oil or melted butter, and garnish with herbs.

Maple Sriracha Roasted Cauliflower🔥🥦
Ingredients:
1 head of cauliflower, cut into florets (about 6 cups)
1 tablespoon oil
2 tablespoons maple syrup
2 tablespoons sriracha (or any chili sauce of your choice)
1 tablespoon soy sauce
Instructions:
Preheat your oven to 400°F (200°C).
In a bowl, mix together the oil, maple syrup, sriracha, and soy sauce.
Toss the cauliflower florets in the sauce mixture until well coated.
Spread the cauliflower in a single layer on a baking sheet.
Roast in the preheated oven for 20-30 minutes, or until the cauliflower is tender and lightly golden.
Once roasted, toss the cauliflower in any remaining maple-sriracha sauce and serve hot.

Creamy Stuffed Mushroom Dip
INGREDIENTS:
- 8 oz mushrooms, chopped
- 1 cup cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- 1/2 tsp Italian seasoning
INSTRUCTIONS:
1. Preheat your oven to 350°F (175°C).
2. In a skillet, sauté the chopped mushrooms and minced garlic until tender.
3. In a mixing bowl, combine the softened cream cheese, sour cream, shredded mozzarella, grated Parmesan, chopped green onions, salt, pepper, and Italian seasoning.
4. Gently fold the sautéed mushrooms into the mixture.
5. Pour the entire mixture into a baking dish and bake for about 25 to 30 minutes, or until bubbly and golden.
6. Serve the dip warm with crackers or bread. Enjoy!

Recipe for Muffins
4 cups flour
4 teaspoon baking powder
4 Large eggs
1 and 1/4 cup of sugar
2 teaspoon essense of your choice
2 cups milk
1 Cup Vegetable oil(Cooking oil)
Method
Pre-heat your oven at 180 degrees.
Cream(Mix) sugar, eggs and oil, add essence and milk and continue to mix.
From another bowl mix the flour and baking powder together and add to the wet ingredients one cup at the time, mix till smooth
Pour the mixture into greased muffin pan and bake till golden brown( you can also use paper cups)

Savory Garlic Mushroom Chicken with Spinach 🍄🍗
Ingredients:
- 2 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cups mushrooms, sliced
- 4 garlic cloves, minced
- 1 cup chicken broth
- 1/4 cup heavy cream
- 1 teaspoon dried thyme
- 3 cups fresh spinach
- Cooked pasta or rice (optional)
Directions:
1. Season chicken breasts with salt and black pepper.
2. Heat olive oil in a skillet over medium heat. Cook the chicken for 5-6 minutes per side until golden and fully cooked. Remove and set aside.
3. In the same skillet, melt the butter. Add mushrooms and sauté until browned, about 5 minutes.
4. Add garlic and cook for 1 minute until fragrant.
5. Stir in chicken broth, heavy cream, and thyme. Simmer for 5 minutes until the sauce slightly thickens.
6. Add spinach and cook until wilted, about 2 minutes.
7. Return the chicken to the skillet and spoon the sauce over it. Cook for another 2 minutes to heat through.
8. Serve warm over pasta or rice if desired.
Prep time: 10 mins, Cooking time: 25 mins, Servings: 2, 350 kcal per serving.
