This is what June tastes like 🍓🌿

Less than a week ago, these strawberries were still hanging off their plants at Navarino Orchard, soaking up the early summer sun and waiting for the perfect moment to be picked.

Now they’ve found their way into our Basil Strawberry Bonbon, June’s seasonal flavor - capturing the bright, fresh character of locally grown strawberries at their peak and bring together everything we love about the start of summer.

June boxes are available for pickup and shipping beginning Monday, June 15th.

Only a handful of boxes remain available, making this your last opportunity to experience this month’s collection before it’s gone!

Join us for our second summer pop-up event at Adam Brian Chocolat! ☀️🍫

After such an incredible turnout for our first event, we’re excited to open our doors again on June 25th & 26th from 1 PM – 7 PM.

We’ll once again be serving our chocolate-dipped ice cream bars, where you can choose from chocolate, vanilla, or raspberry sorbet, enrobed in dark or milk chocolate and finished with toppings like freeze-dried fruit, chopped nuts, and shredded coconut.

We’ll of course also have build-your-own bonbon assortments, which will be the last chance this summer to get your hands on our Strawberry Basil Bonbon!

It was such a pleasure meeting so many of you during our first pop-up, and I’m incredibly grateful for the warm welcome this community has given Adam Brian Chocolat. Whether you joined us last time or have been waiting for a chance to visit, I’d love to see you there!

From field to bonbon 🍓🌿

This month’s seasonal bonbon begins with fresh local strawberries from Navarino Orchard, picked at peak ripeness and transformed into a vibrant strawberry gel. Paired with fresh basil infused into clarified butter before making its way into the ganache, every step is designed to capture the flavors of early summer at their very best.

The result is our Basil Strawberry Bonbon — June’s featured seasonal flavor and just one of the chocolates included in this month’s Signature Collection.

June boxes begin shipping and will be ready for pickup starting Monday, June 15th.

Chocolate-dipped ice cream bars are coming. 🍫🍦

Join us for the first public pop-up event at our production space on May 28th & 29th from 1 PM – 7 PM.

We’ll be serving:
✨ Chocolate-dipped ice cream bars
✨ Build-your-own bonbon boxes

For the ice cream bars, choose from chocolate, vanilla, or raspberry sorbet, enrobed in dark or milk chocolate and finished with toppings like freeze-dried fruit, chopped nuts, and shredded coconut.

This event marks the beginning of a new series of special summer pop-ups as we continue growing into the new space before expanded retail hours later this year.

Big announcement alert ‼️🔔

This is Zach, one of my best friends and the first official employee of Adam Brian Chocolat.

Even just typing this is so surreal. In my past career we both worked office jobs downtown and would grab lunch together, talking about the future and joking about the idea that one day I might quit, start a chocolate business, and somehow convince him to come work with me. It felt like a far-off dream at the time.

Fast forward to now… and here we are.

These photos are from Zach’s first production, and our very first production in our new space! (More on that to come!) Every white splatter you see on the shells of these Salted Vanilla Caramels were completely done by Zach, he will be a full fledged chocolatier in no time!

I’m incredibly grateful to be in this position, to have a community of people supporting (and now joining!), and for the opportunity to bring something positive to the world, I am so excited for what this means for the future of Adam Brian Chocolat!

I couldn’t imagine a better person to be along in this journey with.

The February Collection is officially SOLD OUT.

This was twice the size of any drop I’ve done before, and seeing it disappear so quickly is genuinely so surreal. Thank you all for believing in what I’m building, for gifting these boxes, sharing them, and savoring every piece. Your support fuels every bonbon I craft.

For those reaching out looking to purchase, there won’t be any bonbons available on my website until March, but I will be re-stocking a few local spots this week - keep an eye out for those announcements!

That being said.. a little sneak peek. A brand-new kitchen buildout is underway, with this will come increased capacity & flavor variety, easier pickups, more frequent drops & so many more exciting ideas that can now come to life! This really all just feels like a dream for me and I can't wait to see what the future holds for Adam Brian Chocolat! Thanks for coming along with me for this journey!
