Excited to share my delicious chicken bone broth soup that I'm enjoying for lunch at work today! It's incredible how prepping this dish on Monday has kept me nourished all week long. Now, as I savor the last of it on Saturday, I can't help but reflect on the amazing benefits of bone broth.

Bone broth has a rich history as a vital source of nutrients. Packed with collagen, it’s fantastic for our hair and nails, and the gelatin is great for bone and joint health. Plus, it’s an all-around nutritious option that supports our entire body!

Here's my super simple recipe that you can easily recreate:

**Ingredients:**
- 1 organic chicken
- 1 onion, grilled
- Salt and pepper to taste
- Paprika (to your preference)
- 6 cups organic spinach
- 1 cup mushrooms, sliced
- A dash of umami seasoning (optional)

**Instructions:**
1. Preheat your oven to 375°F (190°C). Broil the organic chicken for about 20 minutes until golden brown with onions.
2. In a large pot, boil the broiled chicken and grilled onions in water for about 4 hours. This allows all those rich nutrients to be extracted.
3. After 4 hours, add salt, pepper, paprika, spinach, and mushrooms to the pot.
4. Let it simmer for an additional 30 minutes, allowing the flavors to meld together.
5. Serve hot and enjoy the warmth and nourishment of this hearty soup!
