Cauliflower Grilled Cheese Pancake๐
4 Servings
Per Serving = 1 oz Lean, 1 Green, 3 Condiments & 2 Fats
Ingredients:
2 cups grated cauliflower
1 egg
1/4 cup almond flour
1 tsp salt
1/4 tsp pepper
2Tbsp butter
4 tsp light olive oil
3 ounce low fat cheese
Directions:
- Combine cauliflower, egg, flour, salt & pepper (set aside)
- In a heavy saucepan heat 1 tbsp butter and 1 tsp olive oil over medium low heat. Once oil is hot, carefully place 1/4 cup sized scoops of cauliflower mixture in pan and cook for 2 minutes, until browning on bottom.
- Flip pancake over with spatula and place cheese so it is equally divided on one pancake. - Cook for 1 more minute then place second pancake on top of cheese and press down. -Cook for 30 seconds then flip over entire sandwich, press down and cook for 30 more seconds.
