Amazing Chicken
Ingredients.
1 whole chicken -[4 lbs], pat dry
1 head Napa cabbage, cored cut & in half
2 carrots, peeled, cut into planks
4 garlic cloves, sliced
5 slices fresh ginger
Apple, sliced
Onion, sliced
1 star anise
1 tbsp sea salt
Method.
Line bottom of Dutch oven with cabbage leaves.
Scatter the onions, garlic, ginger, & apple over cabbage
Add star anise & salt.
Lay whole chicken on top.
Cover chicken with remaining cabbage leaves.
Cover with tight-fitting lid.
Cook on medium-low for 2+ hours.
Flip chicken over halfway through, remove star anise.
Check chicken at 2 hours. It’s done when the meat is falling -off-the-bone tender.
Plate vegetables & chicken.
Ladle broth over.
Enjoy with rice, cauliflower rice, quinoa.
