Say hello to my chocolate babka. We put up a picture the other day and I can't believe the response. Some of you are asking what it is exactly: it is a yeast raised sweet dough filled with layers of chocolate 'smear' which is melted dark chocolate and butter with a touch of almond paste. The dough is rolled thin with the chocolate smear spread across the dough which is then rolled up and twisted. I like to top mine with large NY style crumb topping. Strangely - traditional babka seems to skimp on the crumb and more often than not there is absolutely NO chocolate topping. My mentor, Bennett Pakula, instilled a love of sweet doughs - not because they were easy but because they were hard - to steel a phrase. But he took it to the next level by adding melted chocolate on top which no one else seems to do. You rarely hear me say this but this is delicious and addicting.
