1 teaspoon peppermint extract
Green gel food coloring
1/4 cup crushed peppermint candies or candy canes

Cozy Gingerbread Cupcakes with Cinnamon Cream Cheese Frosting 🎄😋
Ingredients:
For the cupcakes:
1¾ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
½ teaspoon salt
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup molasses
1 large egg
½ cup buttermilk
For the frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Directions:
Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
In a large bowl, beat the butter and sugar together until light and fluffy. Mix in the molasses, followed by the egg, until fully combined.
Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
Fill the cupcake liners about ¾ full with batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
For the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Mix in the cinnamon and vanilla extract.
Pipe or spread the frosting onto the cooled cupcakes. Garnish with a sprinkle of cinnamon or festive decorations if desired.
