I wish I could transport the smell of concord grapes warming in the sun to you. The fragrance is sweet and elegant, like a perfect candy sent from the earth. We’ll be turning them into a Concord Grape Sorbet with Goat Cheese, Honey and Candied Herbs as part of our Autumn Tasting menu this weekend.

The raw beginnings of a chilled plum soup, part of our Summer Tasting Dinner this weekend. This is paired with goat cheese, roasted beets and walnuts. A balance of sweet and savory, smooth and crisp, creamy and light. We add a course like this after the heartier foods to lighten the dinner. A little acidity helps to invigorate the appetite for more to come.
