This cut from Firegrass Wagyu was a big deal 😁.

Sweet chili bourbon salmon 😁.
Seared and smothered on my Kamado Joe soapstone 🔥.
This dish will be a hit for Memorial Day weekend 👍.
Ingredients ⬇️
- Filet of salmon cut into portions
- 2 tbsp olive oil
- 2 tbsp seafood seasoning of choice
- 2 tbsp chopped cilantro
Sauce
- 1/2 lemon juiced
- 4 tbsp non salted 🧈
- 1 tbsp olive oil
- 1 tbsp hot honey
- 1 tbsp minced garlic
- 1 shot bourbon
- 1 tsp seafood seasoning of choice
- 1 tbsp sweet soy sauce
- 1/4 cup sweet chili sauce
Directions ⬇️
- Heat soapstone to 400 F
- Using high heat oil coat the stone
- Combine the sauce ingredients in a sauce pot
- Bring to a boil and then simmer for 10-15 min
- Place the 🐟 flesh side down for ~4-5 min
- Flip the salmon over and continue cooking till desired temp
- During last 5 min smother the 🐟 with the sauce
- Remove, top with cilantro, and dig in
