It's been awhile since I've posted. It's been awhile since I've cooked. I made this recipe last night for the third or fourth time, and I'm getting faster with the scratch sauce. I used dried celery flakes, onion and garlic to speed things up. We're out of homemade stock, so I used a boxed Simple Truth stock that was on sale this week. The sauce came together pretty well, but was a little thin. I opted to skip the cornstarch slurry I've used in the past and see how it went. (Note: I should have added the slurry.) Panko and butter topped it off, as I prefer that to the heavier crackers in the recipe. The kids still enjoyed, I enjoyed, and after two months of relying too much on take out, I was grateful for the comfort of it.
