We teach individuals and groups successful ways to make healthy dietary changes to prevent and treat chronic diseases and conditions. We work in research studies; provide individual counseling, or group classes.
Dietary interventions for diabetes, cardiovascular disease, metabolic syndrome, cancer, obesity, and gastrointestinal diseases.
We have a teaching kitchen that is the heart and soul of our Center. This is where people come to learn about food through the pleasurable modalities of cooking and eating together.
Culinary Medicine
Goal: To introduce through story and example Leadership and Professionalism characteristics to Senior Medical Students
Objectives: By the end of this course, the learner will:
Understand their role as a leader in both their professional and personal lives
Expand their concept of professionalism to include personal growth, gratitude (journaling), meditation and mindfulness, and appreciation of the spectrum of life including art, food, story
Learn the art and utility of storytelling in helping others, and yourself
Begin skills of lifelong learning beyond just medical education
As part of this course, students spend 4 hours preparing several healthy dishes in the Center for Applied Nutrition, to learn Culinary Medicine. We then tell stories of people who seek to improve their lives through nutrition.
