The importance of Salicornia as a functional food has gained consumer attention due to the presence of an array of phytochemicals associated in combination with many positive health effects. Different food cultures around the globe consume Salicornia either raw (i.e., as salad green) or cooked (i.e., boiled, steamed, stir-fried, microwaved, pressure cooked) alone or associated with other foods such as meat, rice, pasta, and so on. Approximately, 90 bioactive phytochemicals have been isolated and identified. The health benefits associated with such bioactive phytochemicals are due to many properties: antioxidant, anti-inflammatory, antidiabetes, anticancer, anti-obesity, and cardio protectivea and neuroprotective properties.
