FRIDAY COUSCOUS

Couscous, originally a Berber dish, the emblematic dish of North Africa, is officially included in Unesco’s intangible cultural heritage.

Couscous is made from tiny steamed balls of semolina flour . It’s actually a type of pasta 🍝. The grains are hand-rolled with oil and salt then steamed over a simmering stew, so they can absorb the flavor. Once fluffed up, they serve as a delicious base for braised 🍗🥩meats or 🐟 fishes, 🥕🍆🍅🍠🫑 vegetables, 🌶 Harissa chily paste, 🧅 onion confit with 🍇 raisins.

It is said that «there are the same number of couscous recipes as villages, the same number of tajines recipes as vegetable greenery gardens, as many desserts as orchards and as many recipes, jealously guarded secrets, as families».

In Morocco 🇲🇦 , many households prepare couscous every Friday noon to reunite the family 👨‍👩‍👧‍👦

Tagines are terracotta factories with a conical lid, in which the cooked preparation, according to tradition, will cook for several hours in the heat of the brazier.
Stews are prepared meat, poultry, fish... simmered with seasonal vegetables or fruits especially dates, prunes, olives, lemons with salt.
The bread, round and flat, serves as a fork.
