Besan bhaat!
Besan Bhaat is a simple, comforting Maharashtrian-style rice dish made by cooking rice with seasoned gram flour (besan). It's flavorful, inexpensive, and quick to prepare.
Ingredients
1 cup rice (washed)
¼ cup besan (gram flour)
2 tbsp oil or ghee
1 tsp mustard seeds
1 tsp cumin seeds
8–10 curry leaves
2 green chilies, chopped
¼ tsp turmeric powder
½ tsp red chili powder (optional)
Salt to taste
2½ cups water
2 tbsp chopped coriander
Lemon juice (optional)
Method
Heat oil or ghee in a pan. Add mustard seeds, cumin seeds, curry leaves, and green chilies.
Add besan and roast on low heat for 2–3 minutes until aromatic. Do not let it burn.
Stir in turmeric, chili powder, and salt.
Add the washed rice and mix well so the grains are coated with the roasted besan.
Pour in the water, bring to a boil, then cover and cook on low heat until the rice is done (or pressure cook for 2 whistles).
Fluff the rice gently, garnish with coriander, and add a squeeze of lemon juice if desired.
Serve hot with plain yogurt, pickle, papad, or a simple vegetable curry.

Pairings: Cook them down into stews, soups, or mix with onions, tomatoes, and peanut butter to make traditional dishes like muboora.
