Meringues made with Ovo egg white powder are a fantastic high-protein, low-fat, easy, and super yummy treat! They're basically crunchy clouds of sweetness with almost pure protein from the egg whites—light, airy, naturally gluten-free, and addictive when done right. Perfect for keto/low-carb versions too if you swap the sugar.
Basic Recipe (makes about 20-30 small meringues/kisses)
Ingredients:
•2–3 tablespoons Ovo egg white powder (roughly equivalent to 3–4 fresh egg whites
•6–9 tablespoons warm water (body temperature to max ~120°F/49°C — not hotter)
•½–¾ cup granulated sugar (or superfine/caster sugar; use erythritol/allulose blend for low-carb/keto version)
•¼ tsp cream of tartar (highly recommended for stability)
•Pinch of salt
•½ tsp vanilla extract (or other flavors like almond, lemon, cocoa).
